Bernard Pacaud, a three Michelin-star chef, has sold a majority share of his restaurant L’Ambroisie to Walter Butler
Paris – CFI is pleased to announce that it acted as the financial advisor to Bernard Pacaud and his family in the majority sale of the property and business of the restaurant L’Ambroisie to the Butler Industries group.
Founded by Bernard Pacaud in 1981, L’Ambroisie is a legendary restaurant located in the Place des Vosges in Paris, holding three Michelin stars since 1986.
As an ambassador of French gastronomy, L’Ambroisie welcomes its guests in an 18th-century setting adorned with Aubusson tapestries and period parquet floors. It offers an intimate and refined atmosphere, reflecting the iconic dishes of Bernard Pacaud, notably known for his sliced sea bass with artichoke and Kristal caviar.
Following a negotiated process led by CFI, L’Ambroisie will continue its development with Bernard Pacaud and Butler Industries as the major shareholders.
Butler Industries is the Family Office of Walter Butler, who has been a shareholder of Paradis Latin since 2018 and Pierre Hermé since 2021. This diversified investment structure strengthens its presence in the high-end restaurant and French lifestyle sectors through this acquisition.
With this emblematic transaction and after serving as the advisor for the sales of Pierre Hermé and Michalak Paris earlier this year, CFI further establishes its position in the world of culinary excellence.
This transaction will close later this year.
